tomato-basil pasta salad

Instead of pesto pasta with lots of oil, try this pasta salad with fresh tomatoes and grated Parmesan cheese.

Ingredients

  • 2 ounces rotini pasta, uncooked
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons olive oil, extra-virgin
  • 2 tablespoons tomato, chopped
  • 1 tablespoon basil, fresh, chopped
  • 1 1/2 tablespoons Parmesan cheese
  • 1/4 teaspoon balsamic vinegar

Preparation

  • prepare rotini per package directions, adding salt and 1/2 teaspoon olive oil to the water
  • while pasta is boiling, chop tomato and basil
  • gently toss tomato and basil with remaining teaspoon of olive oil and the balsamic vinegar
  • when pasta is cooked, drain and toss with tomato-basil mixture
  • sprinkle with Parmesan cheese and enjoy either hot or cold
