Enjoy these healthy, homemade meatballs made with lean ground beef and turkey atop spaghetti and sprinkled with Parmesan cheese.

Ingredients

  • 1/2 cup diced onion
  • 1 tablespoon minced garlic
  • 1/2 pound lean ground beef
  • 1/2 pound ground turkey breast
  • 1 large egg white
  • 12 ounces spaghetti
  • 1/2 cup chopped fresh parsley
  • 1/2 teaspoon dried oregano
  • 1/3 cup seasoned dry bread crumbs
  • 1 26-ounce jar fat-free spaghetti sauce

Preparation

  • coat nonstick skillet with cooking spray, place over medium heat
  • add onion, cook for 3 to 4 minutes until lightly browned. Add garlic and cook for 1 to 2 minutes
  • mix beef and turkey in a large bowl. Add onion mixture, bread crumbs, egg white, oregano, and 1/2 cup of the spaghetti sauce. Mix well
  • wet your hands with cold water and form mixture into 12 meatballs
  • put meatballs in skillet, brown quickly. Turn meatballs as they brown
  • transfer to plate lined with paper towel to absorb any fat
  • place remaining spaghetti sauce in medium saucepan
  • add meatballs, cover and simmer
  • cook spaghetti according to package directions. Drain and place in large bowl
  • add sauce and meatballs; stir lightly to mix. Sprinkle with parsley
  • serve with 2 tablespoon of Parmesan cheese (2g fat) and 1 soft bread stick (2g fat)
