Ingredients

  • 4 lamb chops, 5 ounces each
  • 4 medium clusters seedless grapes
  • 1 teaspoon olive oil
  • 4 fresh rosemary sprigs
  • 4 fresh thyme sprigs

Preparation

  • lightly coat gas or charcoal grill with grilling spray and heat to medium-high
  • trim tails and fat from the chops
  • rinse grapes and pat dry. Brush grapes with oil
  • tuck a sprig of rosemary and thyme into each grape cluster
  • put chops in center of grill. place grape clusters along edges
  • grill chops and grapes, turning frequently for 15 minutes, or until grapes develop grill marks and a few start to split and chops reach desired doneness

  • 1/2 cup wild rice
  • 1/2 cup long-grain white rice
  • 2 oranges, peeled and sectioned
  • 1/2 cup dried cranberries
  • 1/2 cup sliced scallions

  • 1 tablespoon fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon dried basil

Preparation

  • cook rice according to package directions. Cool and transfer to large bowl
  • stir in oranges, cranberries, and scallions
