ingredients

  • 4 medium baking apples such as McIntosh or Macoun
  • ¼ cup raisins, coarsely chopped
  • 1 tablespoon chopped toasted unsalted walnuts
  • 2 tablespoons packed dark brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • 1 tablespoon white wine
  • Juice of 1 lemon
  • 1-½ teaspoons cornstarch
  • 1 cup orange juice

preparation

  • Core the apples using a corer or paring knife, leaving a hole 1 inch wide. Coat a 9X9-inch baking dish with nonstick cooking spray and stand the apples in the dish.
  • In a small bowl, mix the raisins, walnuts, brown sugar, cinnamon, and cloves. Stir in the wine and lemon juice. Spoon into the cavities of the apples; if any mixture remains, spoon over the apples.
  • Place the cornstarch in a small bowl. Add the orange juice and stir until smooth. Pour around the apples. Bake at 350 degrees F for 50 to 60 minutes, or until apples are soft when tested with a sharp knife. As the apples bake, occasionally baste them with the pan juices. Serve warm.
